Ingredients
Meat: 3.5kg beef (with an 80% meat and 20% fat ratio).
Pork: 1.5kg pork (also with an 80% meat and 20% fat ratio, or you can use pork "spek").
Water: 1500 ml of ice-cold water.
Spice: 410g BBQ Beef Sausage mix
Casings: Natural thick or thin casings.
Instructions
Mince the meat: Mince the beef and pork to the desired coarseness.
Mix the ingredients: In a large bowl, combine the minced meat and fat with the BBQ Beef sausage spice and the ice-cold water. Mix thoroughly.
Allow to stand: Let the mixture rest for about 30 minutes. During this time, soak the sausage casings in water to make them pliable.
Test the seasoning: To check the flavor, fry a small piece of the mixture in a pan and taste it.
Stuff the casings: Fit the soaked casing onto a sausage stuffer or a large funnel. Fill the casings with the meat mixture, being careful not to over- or under-stuff them.
Rest and cook: For best results, allow the finished sausage to hang overnight before cooking on the braai (barbecue).
