Dry chilli is a fresh chilli that’s been dried to preserve it and intensify its flavour. Drying concentrates both the heat and the aroma, so the taste is usually deeper, smokier, and sometimes slightly fruity compared to fresh chillies.Different chillies bring different personalities. For example, bird’s eye dries into tiny firecrackers of heat, while ancho (dried poblano) is mild, earthy, and raisin-like.
You’ll often see them ground into chilli powder, rehydrated in hot water to make sauces, or toasted in a pan to unlock oils and boost aroma. Drying doesn’t magically make chillies “hotter,” but because you lose water and keep the capsaicin, the heat feels more concentrated. If kept in an airtight jar away from sunlight, they last months—sometimes a year—without losing too much punch.
