Cassia vera is a type of aromatic spice bark from the Indonesian cassia tree (Cinnamomum burmanii), similar to but distinct from Ceylon cinnamon (Cinnamomum verum). It is sold as dried, thick, single-layer bark sticks with a strong, woody flavor, used in cooking, drinks, and savory dishes. Unlike the thin, multi-layered sticks of Ceylon cinnamon, cassia sticks are hard and can be a single, thick piece of bark that is reddish-brown and sold as sticks or quills.
It has a strong, pungent, woody, and less delicate flavor than Ceylon cinnamon. Used in culinary dishes, cakes, pastries, and other sweets as a flavoring agent for ice cream, puddings, and fruit dishes. Adds warmth to curries, stews, and meat dishes.
