Description
Black mustard seeds are the tiny round seeds of the Brassica nigra plant. They’re usually dark brown to almost black, and have a sharp, pungent taste when crushed or chewed. They carry a strong, spicy bite when raw, but once fried or toasted in oil, they release a nutty aroma and milder flavor. Common in Indian, Middle Eastern, and African dishes. Often “tempered” in hot oil at the start of cooking—this makes them pop and infuse the oil with flavor. Contain compounds like glucosinolates (linked to health benefits), some protein, and minerals such as calcium, magnesium, and selenium. Traditionally used in pickling, spice blends (like curry powders), and even for making mustard pastes in some cuisines. They’re a bit stronger than yellow (white) mustard seeds and not as common in Western cooking, but they add real depth and punch when used right.
