Description

The difference between Black Pepper and White Pepper comes down to how the pepper berry is processed. White Pepper is the same berry, but fully ripe and soaked to remove the dark outer skin. Only the pale inner seed remains. Has a milder in aroma, more earthy, sometimes a little fermented because of the soaking process. Often used in light-colored sauces, creamy soups, and dishes where specks of black pepper would stand out.
