Safari Biltong Spice is a popular and traditional South African seasoning blend known for its classic mild, beefy, and coriander flavor. In addition to making biltong, it can also be used to season steaks, lamb ribs, and stews.
Ingredients and allergen information
Flavoring: Includes ingredients such as celery, maize flour, hydrogenated vegetable fat (palm fruit), and various colorants.
Flavor enhancers: Contains MSG (E621) and other enhancers.
Salt, spices, and sugar: The blend uses salt, various spices (including coriander), and sucrose for flavor balance.
Preservative: Contains potassium sorbate (E202).
Allergens: It contains celery, and a typical warning indicates it may contain milk, egg, mustard, soy, and wheat gluten.
How to make biltong with Safari spice
Prepare the meat: Trim all visible fat and connective tissue from the meat and cut it into long strips, about 25 mm thick.
Add liquid (optional): For added flavor, you can sprinkle the meat with a mixture of vinegar and/or Worcestershire sauce, about 50–100 grams per kilogram of meat.
Season the meat: Calculate the required spice at 40–50 grams of Crown National Safari Biltong Spice per kilogram of cut meat.
Marinate: Mix the meat and spice thoroughly. Cover the container and refrigerate overnight to allow the flavors to develop.
Dry: Hang the meat in a biltong dryer or a well-ventilated area. If using a dryer, avoid using the heat function for the first 12 hours. Continue drying until the desired moisture level is reached, typically around 50% weight loss.
