Rubbed Sage is the dried leaves of the sage herb that have been crumbled or rubbed apart, creating a light, fluffy, and cotton-like texture with a strong, aromatic, and savory flavor. This processing method separates the leaves from the stems and creates a less concentrated form of dried sage compared to finely ground sage, making it ideal for dishes where the sage flavor should be less intense or dominate the other ingredients, such as poultry, pork, and stuffing. Rubbed sage is made by taking dried sage leaves and rubbing or crumbling them between the hands or two surfaces to separate the pieces from the stems. The resulting texture is a light, fluffy powder or flakes that feel almost like cotton and has a warm, woody, savory, and earthy aroma with an astringent and slightly peppery flavor profile. Rubbed sage is excellent for seasoning poultry, pork, lamb, and is a key ingredient in stuffing and dressings. Due to its fluffy nature, a teaspoon of rubbed sage is less intense in flavor than a teaspoon of ground sage. If a recipe calls for rubbed sage and you only have ground sage, use half the amount. Conversely, if a recipe calls for ground sage and you have rubbed, you will need to use double the amount of rubbed sage.
